– 100g of 100% Ibérico de Bellota by Monte Nevado (acorn-fed)
– 100g of 50% Ibérico de Cebo by Monte Nevado (grain-fed)

This duo offers a delicious journey into the world of Spanish jamón, showcasing how breed, diet, and aging combine to create distinctly different textures and flavours.

The 100% Ibérico de Bellota comes from purebred Ibérico pigs raised free-range on dehesa woodlands and finished on a diet of acorns. Aged for over 36 months, this ham is intensely aromatic, deeply marbled, and melts on the tongue with nutty, complex, and lingering flavours—considered the finest ham Spain produces.

The 50% Ibérico de Cebo is made from crossbred Ibérico pigs raised on a high-quality grain-based diet. It’s cured for around 24 months, producing a slightly firmer texture with a milder, gently sweet profile. It’s a beautiful contrast to the Bellota, offering balance and versatility.
